Directions:  
Slice onions into thin rings. Saute in butter until tender. Add 2 cups no-salt-added canned whole tomatoes (I use homemade). Cut zucchini into 1/2 inch slices and add to tomatoes & onions. Add 1 tsp dried basil and about a half-cup of V8 juice. Cover and cook for about 10 minutes until zucchini is tender.
