Directions:
Heat the oven to 400. Grease 2 baking sheets. Place flour, butter, and cheeses in a food processor fitted with a metal blade. Pulse for about 1 minute, until the butter and cheese are evenly distributed in the flour. Add the egg and pulse until it's incorporated. With the processor running, pour the milk through the feed tube and blend until the dough forms a ball (about 1 minute). If the dough feels sticky, add a bit more parmesan or romano. Place half of the dough on a floured work surface. With a rolling pin, roll out the dough until its a roughly 1/8 inch think and then trim it into a rectangle. Next, cut the pastry into strips about 4 inches long and and 1/2 inch wide. Twist the strips and place them on a baking sheet, 2 inches apart. Repeat the process until all the dough has beenused. Bake the sticks for 8 to 10 minutes, unitl they're lightly browned. Store them in an airtight container for up to 1 week. Makes about 60 straws.
