Directions:  
Add oil to a small frying pan, put it on medium heat. Add 3 large eggs to the pan. Using a spatula mix the eggs around and get the yokes good and mixed in. Add Flax Meal, & Onion Powder to the raw egg mixture. Allow to cook until the bottom is fully cooked, (you can tell when the edges of the top are becoming cooked through and the egg will slide around in the pan as a whole entity rather than separating). Carefully turn, using caution not to break the egg "circle". Add any finely chopped veggies you wish to one half of the top of the eggs. Sprinkle cheese on top of the veggies, and then carefully fold the side of the circle you did not put toppings on, onto the side with the veggies on it. Hold it with the spatula for a few seconds till the cheese grabs the top and you can let it go without it falling apart. Allow to cook till the cheese is melted, then eat!
