Ingredients:  Makes 8 servings (8 cups)

1  teaspoon
 
1  teaspoon
 
1  teaspoon
 
1/4  teaspoon
 
 
1/2  teaspoon
 
1  teaspoon
 
1/4  cup
 
4  cups
 
2  cups

Directions:  
1.) Chop all vegetables
2.) Saute vegetables in a splash of water until soft in large pot
3.) Mix spices in 2 cups of water and add to vegetables.
4.) Turn to 6 or 7 on stove (almost boiling).
4.) Add beans and let simmer for 15 minutes.
5.) Add tomatoes.
6.) Add 2 cups water and let simmer for 45 minutes on 3 or 4 (med. - low).
7.) Add soy crumbles and let simmer for 30 minutes on 3 or 4 (med. - low).
8.) Serve.
9.) Serving options: Top with cheese, float french bread topped with raw tomatoes, fresh cheese, salt and pepper in the top, serve with rolls on the side - options are limitless!!
