Description: Interestingly spiced ground beef and vegetables. Low fat and low carb, but high flavor. Serving size is 1/6 as a main dish, 1/3 for a one-dish meal. This is a one-dish meal for Curves Phase 1, a saucy casserole for Phase 2, and can be served over biscuits for Phase 3!

Directions:

Put meat in a deep skillet and mash in spices.

Cook over medium heat, breaking up clumps.

Drop heat to low, add spinach, and cover tightly

Peel and chop the eggplant; add to meat.

Chop zucchini and mushrooms; add to meat.

Stir thoroughly, cover tightly and simmer 20 minutes.

Salt and pepper to taste.

NOTES: If you can't find extra lean ground beef, brown and drain before adding spices. To make this a fancy baked casserole, layer the cooked meat and raw vegetables in a casserole dish, add a cup of white sauce, and bake at 350 F for 30 minutes or so.
