Directions:  
1.) Slice eggplant into 3/8" slices (salt lightly if older)
2.) Brush eggplant with olive oil, line glass baking dish with single layer of slices
3.) Bake in 400 degree oven (add oil as need to keep from over drying)
4.) Dice chicken breast (same size as diced tomatoes)
5.) Finely chop onion and bell pepper
6.) Saute chicken, onion, and pepper in 2 tbsp of olive oil until chicken is no longer pink
7.) Add tomato products and seasoning (oregano, basil, salt, pepper, etc) simmer until bubbly
8.) Remove eggplant from oven to add chicken sauce, create layers depending on number of eggplant slices
9.) Sprinkle with Parmesan cheese and bake until cheese is melted
