Directions:  
Chop up celery, carrots, potatoes (i leave the skin on the potatoes), and onion (i puree the onion because i hate the texture but like the taste). Throw everything in the crock pot, along with 5 cups of Vegetable broth. Cook on low heat for 8 - 10 hours until vegies are soft. Then mix skim milk & flour together and add to crock pot. Turn crock pot on high heat for 20 minutes. Turn off heat and add the cheese, stir until melted. 6 large servings about 2.5 cups each - so this is a hearty meal - very filling and yummy!!
