Directions:  
Pre-heat oven to 425F. Cut baby potatoes in half, mix olive oil and balsamic vinegar in a separate bowl, chop onion and mince garlic. Add onion, garlic and potatoes to olive oil/vinegar mixture and season with salt and pepper. Pour ingredients in baking dish and bake covered with foil for 15 minutes. Remove foil and continue baking for 25 minutes until tender.
