Coffe-Infused Chocolate Cupcakes

3/4  cup		water
1/2  cup		unsweetened cocoa powder
1/3  cup		semisweet chocolate chips
1  tablespoon		expresso powder
1  cup		unbleached all-purpose flour
1  cup		sugar
3/4  teaspoon		baking soda
1/2  teaspoon		baking powder
1/2  teaspoon		salt
2		eggs
1/4  cup		vegetable oil
3  tablespoons		Kahlua
1-1/2  tablespoons		vanilla extract

Preheat oven to 350. LIne cupcake pan with liners.

In small saucepan, bring water to a boil and remove from heat. Stir in cocoa powder, chocolate chips and espresso powder and stir until smooth. Set aside to cool (about 20 min).

In mixing bowl. add flour, sugar, baking soda, baking powder and salt. Whisk to combine. Add eggs, oil, Kahlua, vanilla and chocoalte mixture to bowl, whisking untial all ingredients ar eincorporated.

Fill cupcake cups and bake 18-20 min. Top with Serious Coffee Buttercream.
