Description: Based on the Libby's recipe, but with healthy substitutions and no crust. I find Splenda to be less sweet than sugar so I use a full cup. The original recipe calls for 3/4 c. sugar, so adjust to your taste.
Ingredients:  Makes 8 servings (8 slices)

Preheat oven to 425 degrees F.

Combine sugar, salt, cinnamon, ginger, and cloves in small bowl. Beat eggs lightly in large bowl. Stir pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie-sized, round casserole.

Bake for 15 minutes. Reduce temperature to 350 degrees F; bake for 40-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours Serve immediately or refrigerate
