Description: A great flavor packed mini pumpkin treat that's perfect if you want a little something pumpkin but not a whole piece of pie!

Directions:  
Prepare mini muffin/tart pan(s) with cooking spray. Mash Ritz crackers into a coarse meal (suitable for a crust - but not too fine). Place about 1 1/2 tbsp in the bottom of each mini muffin/tart section. In a medium bowl, mix pumpkin, eggs, splenda and spices. Add evaporated milk and mix well. Place about 2 Tbsp pumpkin mix (I used the Medium Pampered Chef Scoop) into each mini muffin/tart section (on top of the crackers). Cook at 350 for about 35 min. Checking with a toothpick just like pumpkin pie to see when they are done.
Makes about 34 tarts.
