Directions:

Preheat oven to 350 F.

Heat butter spread in large saucepan over medium heat heat. Add squash and onions, and cook, stirring often, until softened.

Add 1/4 c. water and cover, cooking until onions and squash are soft.

Mix cheeses and set aside.

Once squash is cooked, remove from heat. Combine mayo and sour cream and add to squash mixture. Sitr in 1/2 of cheese.

Crack eggs into bowl and mix well. Add eggs to squash mixture.

Add 1 cup of saltines to mixture. Stir until well combined.

Pour half of squash into glass 8" inch square dish. Top with remaining cheese. Cover with other half of squash. Top with remaining 1/2 c. of saltine crackers. Spray liberally with cooking spray.

Bake in over about 30-40 minutes or until center is set and top is golden brown.
