Directions:
In a large bowl, mix the meats, 1/4 cup of the onion, half of the garlic and the bread crumbs, salt, pepper and egg. Cover and refrigerate for 1 hour (can be made the day before). Heat 1 tbsp of the oil in a mediom stockpot over low heat. Add the remaining onion and garlic and cook, stirring frequently for 5 to 7 minutes or until the onion is softened and golden in color. Add the broth, water, spinach, oregano, basil and parsley. Bring to a boil. Lower the heat to low ans simmer for 20 minutes. Strain and keep warm. Transfer the meat mixture to a food processor and pulse about 30 seconds or until smooth. Shape into 1-inch meatballs and set aside. Heat the remaining 2 tbsp oil in a large saucepan over medium-high heat. Cook the meatballs, turning frequently on all sides until browned. Bring the borth to a simmer over medium heat. Add the meatballs and continue to simmer about 30 minutes.
