Directions:  
chop onion and garlic
add olive oil to pot to heat
add onion, garlic and spinach...sautee for 2-3 min
add rice a sautee for about a minute
add chicken stock
bring to a med boil
turn down to simmer
cook until rice is tender (about 20-25 min)
