1  tablespoon
 
2  teaspoons
 
1  teaspoon
 
1/2  teaspoon
 
14  ounces
 
3/4  cup
 
2  scoops

Blend 1/2 C. plus 1 T. flax seed into meal

Blend 3/4 C. plus 1 T. oats into flour

Mix dry ingredients

Add shredded carrots & raisins, mix

Blend banana (or pumpkin) and liquid egg whites with immersion blender

Combine all

Spoon into greased muffin pan (makes 12 muffins) - fill to the top, as these will not rise much

Bake at 350 for 20 -30 min
Orange-Cranberry variation: substitute 1/4 C. orange concentrate for 1/4 C. of egg whites, add zest of 1 orange and 1 t. orange extract, use cranberries, use 1/3 C. xylitol, omit spices
Banana-nut variation: substitute ripe banana for the pumpkin, walnuts for the dried fruit, omit spices
