Directions:  
Heat oil and add onion and carrots. Cook until tender, 3 - 5 minutes.
Then add the mushrooms, saute until just tender
Add garlic, ginger, and jalapeno - cook about 2 minutes
Add peas and cook for another minute
Add rice
Stir all ingredients together and add egg and cook
Add soy sauce
Squeeze fresh lime juice over the pan when finished
