Directions:  
quinoa - to cook put 2 cups water to 1 cup quinoa with a little salt in the water. boil water first then add the quinoa. takes about 10-15 minutes. If all water isn't absorbed just drain in a collander.

beat 2 egg whites until fluffy
beat 2 eggs, then stir in black pepper, ancho chile, raw chives, feta
stir in quinoa and bread crumbs until combined
fold in beaten egg whites
portion out with ice cream scoop and flatten onto parchment paper
fry in non stick skillet or broil or bake
