Directions:  
rinse and drian beans. place them in a soup pot over high ehat. add water and ham hocks. bring to a boil and turn down heat to low and simmer, covered, stirring occasionally until the beans are very soft, 2-3 hours.
melt butter in a large skillet over medium heat. add onion and saute stirring until it is limp but not brown, about 6 minutes. scrape the onion adn the residual butter into the soup let cook for another 30 minutes.
pick meat from ham hocks and dice into bite sized pieces adn return to soup. season with salt and pepper.
