Directions:
Cut the cucumber into chunks, put in blender and process until smooth. Add spinach and blend until smooth. Cut the avocado into chunks, add to blender along with coconut oil and the remaining ingredients. Blend until smooth. Add water, as needed. Pour into bowls. Makes two servings. Or you can store the second serving in a container for use later in the day. NOTE: This smoothie is good served with chopped or ground raw almonds that have been soaked overnight in the refrigerator for easy digestion and then dehydrated. All nuts can he digested better if they are first soaked in water. This releases enzyme inhibitors. You can dehydrate nuts in advance, and grind, then sprinkle on top of the smoothie.
