Directions:

Cut 1 average sized butternut squash (peel on, seeds removed) in half, then slice each half in 1-2 inch thick slices.

Quarter 1 small onion and 2 stalks celery

Add all to 8 cups water.

Boil all for 45 minutes or until the squash is very soft. Strain, but keep the broth.

When cool enough to handle, peel the skins from the squash sections. Put all the fruit and the boiled onions and celery back into the broth.

Add to a blender, and blend until smooth and creamy.

Reheat and season to taste.
