Description: A fake out soup... made with only one potato and the rest cauliflower and the traditional toppings of a baked potato
Ingredients:  Makes 8 servings (12 cups)

Directions:  
In large soup pot boil cauliflower florets and peel potato until tender.
Saute onion until translucent in pan sprayed lightly with oil and set aside
Pour water with veggies thru strainer and set aside.
In, now empty soup , add chicken stock ,boiled cauliflower , potato and S&P to taste and bring to a simmer.
Take immersion blender and blend to desired consistency.
Add chopped cooked bacon.
Simmer for 10 min.
Serve topped with shredded cheddar cheese.
