coat the inside of a slow cooker (crock pot) with cooking spray. Combine onions, carrots, cilantro, chipolte pepper, chocolate, cumin, oregano, chili powder, cinnamon, garlic, beans, sweet potatoes, corn, bell pepper and tomatoes in cooker. Make sure there is enough liquid to cover all ingredients. If not, add enough vegetable broth or water to cover all solid ingredients. Cook on low 8 hours stirring occasionally. (If you need it done faster, it may be cooked on high for 4 to 5 hours). The last 1 to 2 hours stir in the tomato paste to thicken if needed. This chili should be fairly thick, not soupy. May add a little salt if needed.
