Directions:  
Dissolve yeast in warm water (wrist temperature) along with 1 teaspoon of honey. Let stand 5 minutes.

Add remaining 2 teaspoon of honey, flour and salt. Mix well.

Turn out on floured board and knead 10 minutes, adding flour if sticky.

Oil a large bowl. Add dough and turn to lightly coat. Cover and let rise 1.5 hours in a warm place.

Preheat oven to 475.

When the oven is hot, punch down dough and knead a few minutes. Divide into 6 equal pieces. Form into 6 smooth, round balls. Cover and let stand 15 minutes.

Roll each ball to 1/2 inch thickness. Place on an ungreased pan. Bake on the lowest rack setting in oven for about 10 minutes until golden and puffy.

Wrap loaves in towel and place in a paper bag for 15 minutes. This serves to maintain their pockets and keeps them from becoming crispy.
