Directions:  
QUINOA COOKIE
1 Preheat oven to 350°F. 2 With a whisk, blend
maple syrup, soy-free spread, almond butter
and vanilla in a medium sized bowl until well
incorporated. 3 Combine rice flour, quinoa flakes,
baking soda, cinnamon and salt in a small bowl.
Add to wet mixture a little at a time and whisk until
well blended. 4 Add chocolate bar chunks. 5 Drop
round teaspoon sized portions about two inches
apart onto a cookie sheet covered in parchment
paper. Sprinkle tops with hempseeds. 6 Bake for
15–18 minutes or until light golden brown. 7 Cool
for at least one minute before removing from
cookie sheet
ICE CREAM
1 Peel and break fresh banana into three pieces.
Freeze for a minimum of 30 minutes. 2 Put frozen
banana in food processor and blend, scraping the
sides occasionally. 3 Add coconut oil, almond
butter and agave nectar, blend again until smooth.
4 After scraping the sides clean with a spatula
(incorporate back into the main mixture), add in
cocoa powder, and blend againSANDWICH ASSEMBLY
1 Place one large heaping tablespoon in the
middle of one (upside down) cookie. Gently press
a second cookie on top, trying not to let the ice
cream spill out the sides. 2 Place on a baking
sheet lined with parchment paper in the freezer
for 30 minutes, until firm. 3 Tip: Ice cream
sandwiches can be made ahead of time, and
stored in a container in the freezer until ready to
enjoy. Made-ahead sandwiches may need to be
put in the fridge for about 20 minutes to soften
before enjoying.
