Directions:

Remove gills and stems from mushrooms, clean, and cook. Put to side.

Cook diced onion until slight coloring occurs.

Add diced red bell pepper and cook for a few minutes.

Turn heat down and add the garlic till done.

Add in drained diced tomatoes and seasonings. Stir.

Add in the mushrooms. Stir and heat till cooked through.

Serve as a topping for pasta, chicken etc...or in a quesadilla.
