Directions:
Blend all the ingredients except chocolate chips in a blender, and process until smooth, about 30 seconds. Pour half of batter into heated skillet, and sprinkle with 1 tablespoon mini chips. Flip when the bottom of pancake is golden, and cook the other side. Repeat with the remaining batter and mini chips to make 2 pancakes. (You can wrap one of the pancakes in plastic or a ziploc and save it for another day. You could even double or triple the recipe and pre-make breakfast for a few days all in one shot.)
