Chocolate coconut cups

1-1/2  cups		unsweetened shredded coconut
1/2  cup		coconut butter
1  teaspoon		vanilla
1  pinch		of salt
10  ounces		1 bag of dark chocolate chips
1/2  cup		coconut oil

mix everything but the chocolate chips, in to a food processor, blend till a chunky texture. Place muffin wrappers in a muffin pan. scoop out coconut mix and place in to muffins wrappers. Melt chocolate in a microwave safe bowl, in the microwave for 30 seconds to 1 minute. Pour over coconut mix and freeze for 20 minutes. These are in standard muffin tins, if you want to cut the calories down a bit try a mini cup cake pan or a candy pan. Enjoy :)
