Sprinkle chicken with seasoned salt and pepper. In a large nonstick pan coat with cooking spray, heat oil over medium heat. Add thighs and cook 6 minuts on each side or until thermometer reads

In same pan cook and stir in shallots until tender. Add broth and sour cream, and salt to taste. Bring to a pile, cook and stir for 2-3 minutes or until it is slightly thickened. Add spinach and cook just until wilted. Serve chicken over 1/6 of the spinach.
