To make the turkey meatballs: Mix ground turkey, egg whites, garlic, oat bran, psyllium husks, cooked rice, parsley and basil. Roll into 5-6 small meatballs. Heat the olive oil and pan fry the turkey meatballs on all sides until golden. Do not fully cook.

Assemble: Heat the tomato sauce and add turkey meatballs to the sauce, cook for 10-12 minutes. Meanwhile, chop mushrooms, peppers and broccoli and add to the sauce. Let simmer another 5-10 minutes until vegetables are tender but not overcooked. Serve and enjoy! Source: Laura Discepola, CNP
