Directions:

Pour oil in a dutch oven and heat until hot

Saute onion, bell pepper and garlic until tender

Add sausage and cook until there is no pink left

Pour meat into colander and drain grease

Return meat to dutch oven

Add tomato paste, diced tomatoes and 1 cup water

Let it simmer for 15 minutes

Mix eggs, cottage cheese, Parmesan cheese, parsley, salt and pepper

Heat oven to 375 degrees

Line bottom of a 13 " by 9" pan with 4 of the lasagne noodles

Pour 1/2 of the egg and cheese mixture over the noodles

Cover with fresh spinach

Cover with 1/2 of the meat mixture

Place 1/2 the mozzarella slices over meat

Cover with rest of the lasagne noodles

Cover with the rest of the egg and cheese mixture

Cover with rest of the meat mixture

Place the other 1/2 of mozzarella cheese slices on top
Bake for 30 to 45 minutes until bubbling
Let stand for 10 minutes
