Cut squash in half and bake in oven for 40-45 minutes at 425 degrees

Meanwhile prepare 4 servings black rice according to directions (should be 1 cup dry measurement) with 1 tsp of sea salt added

Allow squash to cool and then peel with hands

Make bacon

Add 1/3 cup water to rice and smash squash into rice with fork.

Finely dice bacon and add to rice squash and rice

Finish with sea salt
