Description: very satisfying and large serving, could be 2 servings if also having salad and/or soup. can swap any 110 calories worth of lean meat. (chicken, pork loin, shrimp, beef, lamb, veal) Keep in mind the chicken gives you the highest-protein-lowest-fat/cholesterol bang for your buck

Directions:

cook the rice ahead (I almost always have some in the fridge, if I can't get to it I'll feed it to the dogs)

heat a large skillet over medium heat, meanwhile chop the meat into smallish pieces.

put the frozen veg in hot water and cook in microwave on high for 2 minutes,
4
cook the meat either dry or with Pam spray and remove from skillet,
5
add 1/2 Tbsp of olive oil to pan and increase the heat to med-high,
6
once the pan is very hot add rice, spread it out and let set in position for 1 minute, meanwhile drain and chop the veg
7
add chopped cooked vegetables and cooked meat and sauces to pan and toss around
8
spread it out and let set in position for one minute
9
make a well in the middle of the pan and reduce the heat to low
10
crack the egg into the well and stir till mostly cooked
11
fold in the rice mixture and blend/toss all ingredients allowing the egg bits to cook completely
12
