Remove roast from fridge 1 hour prior to cooking

Preheat oven to 500 for 20 minutes

Make cuts in roast all over and insert garlic slices

Place meat fat side down and Liberally spread wortershire sauce over meat making sure it goes into slits

Sprinkle oregano, montreal seasoning and onion over roast that is still fat side down.

Rub oliive oil over it.

When oven has heated, place roast fat side up in oven and turn down temperature to

Cook for 8.5 min per pound for medium

Do not open oven. Turn down heat to 250 and continue to cook for 20 min per pound.

Remove from oven and let sit for 10 minutes before slicing
