Boil potatoes until cooked through. Peel then cut into chunks. Set aside in a mixing bowl.

In a medium skillet cook bacon and onion together. Once cooked, drain drippings and add flour, sugar, dry mustard, salt, pepper. Stir in water, vinegar, celery salt, and pepper. Once mixed cook on high for 4 minutes and then remove from heat and set aside.

Once sauce is cooled, pour over potatoes and mix to combine.
