Directions:  
Steam cauliflower for approximately 25 mins or very tender. Strain and drain as much water as possible. While cauliflower is steaming, cream together cheeses (reserve approx 1 oz of colby jack to sprinkle on top) and greek yogurt with mixer. Blend in warm cauliflower with creamed cheeses until deserved consistency. Gently fold in bacon bits. Pour in a greased 2 qt casserole dish. Sprinkle with remaining cheese. Bake for approx 20 mins at 350 degrees while covered with foil. Remove foil and bake for approximately 10 more minutes or until cheese is lightly browned on top.
