Directions:  
Cut turkey bacon into small pieces and brown in olive oil over medium .heat. Preheat oven to 400F. Add carrots, peppers, onions and garlic to bacon and saute. Once all are softened, add spinach and toss until wilted. Whisk eggs and egg whites together and season as desired. Pour over the bacon/veggie mix and allow to set but not cook through. Sprinkle cheese over top and then put pan into the oven. Bake for 10 minutes then broil for 2 minutes. Remove from oven and allow to rest for 5 minutes before slicing into 6 pieces
