Description: Modification of Bart's Black Bean Soup from Taste of Home: Added, Carrots, Celery, Onion. Used dry beans instead of canned. Added additional spices.

Directions:

Soak beans overnight in 3 cups cold water.

Drain and rinse beans. Put in a soup pot. Add the 2 1/2 cups water. Bring to a boil, reduce heat to simmer and cook for 30 minutes.

Chop Carrots, onion and celery into small diced pieces. Add to beans.

Add remaining ingredients except for corn and rice. Bring back to a boil. reduce heat to medium low and cook for 60 minutes.

Add corn and rice, cook additional 15 minutes.

Serve with chopped green onion, a squeeze of lime juice and top with 2 tbsp reduced fat cheese (not included in calorie count)
