Brown beef, onion, garlic and celery in olive oil. Add remaining ingredients. Simmer at least 30 minutes, the longer the better up to 2 hours. Ground beef can be made into small meat balls and baked 20 minutes and added to the sauce. (Can also use red cooking wine for 1/4 of the water) Options:

Add cauliflower or broccoli blended fine in the water.

Use 1 Tbl sugar and 2 Tbl dill pickle juice for each 2 cups of water as subsitute for wine.

Use ground turkey instead of beef. Gives lower fat

Add Chopped Mushrooms to taste

Fresh herbs are always better than dried, use 4-6 times the amount of the dried, and add during last 30 minutes of cooking instead of at beginning like dried herbs.

I sometimes add rosemary, especially fresh.
