Directions:
0. Prep note: Chop tomatoes & 57 sauce in blender a couple of pulses. When adding, rinse the blender with the 1/2 cup water and add with the tomatoes. 1. Saute bacon in large skillet until partially cooked, drain grease reserving 2 tbsp, then saute onion, peppers and garlic in same skillet until tender. Remove bacon and onion; set aside. 2. Add 1 tbsp olive oil if necessary. Brown chicken in reserved drippings; sprinkle lightly with salt and pepper and thyme. Drain excess fat. 3. Combine cooked bacon, onion mix, tomatos, 57 Sauce and sugar; pour over chicken. Simmer 40-45 minutes or until tender, basting occasionally. 4. Mix the flour with the 1/4 cup cold water, add to sauce to thicken. Add a little at a time until desired thickness is reached. 5. Serve with rice. Note: I like to use boneless skinless chicken thighs, I cut them in 6 pieces each, and quick cook before adding the onions and sauces.
