Directions:  
Sauté chicken and red pepper in coconut oil until well done. Over medium heat, add salsa and let simmer for 1 minute. Add curry and cumin and let simmer for additional 2 minutes. Add coconut milk, kale pieces, and fresh cilantro and let simmer for additional 3 minutes. Serves over cooked quinoa.
