Directions:  
1)preheat oven 350
2)lightly coat chicken with 1 tsp oil salt and pepper and bake 15 min. Cool
3)heat 1 tsp oil and cook onion and pepper2-3 min
4)add spinich. Cook until wilted. Place in towel lined bowl
5)in a large bowl,combine ricotta and beans,mashing slightly
6)add mozzarella,parsley,lemon juice and nutmeg,salt,pepper.
7)cut cooled chicken in 1/2 inch pieces and add to cheese mixture.
8) squeeze in secs water from spinich mixture add to cheese mixyure.
9)place 1/3 cup mixture into center of tortilla and fold in half
19)brush tortillas with oil,salt and pepper
20)bake for 16-18 min
