Directions:  
Chop all vegetables and set aside.
chop apricots and set aside.
in a one cup measuring cup add OJ, ginger, garlic, soy sauce and set aside
slice chicken into slivers, or chop into bite size pieces
in a non-stick skillet or wok heat olive oil add vegetable and stir fry
add chicken continue to cook until chicken done
to sauce add cornstarch, stir into pan
quickly add chopped apricots
stir until thickened
if too thick, add more OJ a teaspoon at a time.
