Cook pasta to package instructions. Drain and set aside.

In a large skillet, dice and cook bacon. Transfer to paper towel lined plate and reserve drippings.

In a large bowl, whisk egg yolks. While continuously whisking, add 3 tablespoons of bacon drippings. Quickly after, add drained pasta and parmesan to egg mixture. Toss to combine. Then add salt, pepper, bacon and parsley. Serve.
