To make roux, combine butter with flour, then add water and bring to a boil.

Reduce heat, add celery, tomatoes, garlic, onions, and bell peppers. Chop enough shrimp to make one cup, then add to gumbo.

Simmer on low heat for 3 hours or less.

10 minutes before serving, add remaining shrimp, crab, oysters, and a dash of salt and pepper.

Serve over cooked rice.
