Directions:  
Chop hard-boiled eggs. In a large bowl, mix eggs with mayonnaise, mustard and a dash of salt and pepper. Stir in chopped celery. Toss the spinach, cucumber and tomato and drizzle with balsamic vinegar to make a salad. Place the egg mixture on top of the salad. Sprinkle with shredded cheese and enjoy!
