Trim fat off pork shoulder, cut into 1 inch cubes, then season with salt, coriander, cumin, and pepper.

Melt the ghee in a large skillet over medium-high heat. Brown pork for about 2 minutes. Transfer pork to a bowl, then cook vegetables in the same skillet, reducing heat to medium.

When vegetables have softened a bit, add garlic and chicken broth. Return pork to skillet and stir to combine, bringing the mixture to a boil.

When skillet starts to boil, reduce to a simmer. Cover and let simmer for 1 hour. Uncover and let simmer for 1 more hour.
