Scrub and clean potato. Preheat oven to 375 degrees F.

Pierce potato several times with a fork, then bake in preheated oven for 1 hour.

Take potato out and let cool. Slice in half lengthwise and use a spoon to scoop out the insides of the potato, leaving the skin. Set the skin aside.

In a bowl, combine all ingredients and mix until potatoes are creamy. Spoon the potato mixture into shells and return to the oven, cooking them for an additional 15 minutes.
