In a sauce pan, combine rice with water. Bring water to boil, reduce heat cover and simmer for 20 minutes.

Boil carrots and peas, drain and set aside.

Heat vegetable oil in a wok, then stir in vegetables. Crack in the eggs and begin to scramble with vegetables. Add in rice and stir to combine. Add a dash of soy sauce (more if you prefer) and toss the rice. Drizzle with sesame oil while tossing.

When heated all the way through, remove from stove top and enjoy.
