Combine cornstarch and soy sauce, then pour over pork and toss to coat.

Heat oil in a large skillet over medium-high heat and brown the pork. Add in 1/4 cup water, then cover with a lid and let simmer for 20 minutes.

Add carrots, onions, bell peppers and sweet and sour sauce in with pork. Recover and simmer for an additional 10 minutes, stirring frequently.

Add pineapple chunks and when mixture is heated all the way through, remove from heat and serve.
