Warm broth in a saucepan over low heat.

Meanwhile, cook mushrooms in a skillet with 2 tablespoons of oil. When they start to release liquid and are heated through, remove from skillet along with liquid and set mushrooms aside.

Add an additional 1 tablespoon of oil to the skillet and cook the shallots for 1 minute over medium heat. Add the rice and mix to combine. When rice starts to show a golden color, pour in wine and stir until the wine is thoroughly absorbed. Add 1/2 cup of the chicken broth to the rice and stir until absorbed. Continue to add 1/2 cup of broth at a time, letting the broth absorb into the rice until rice is al dente.

When all the broth has been added, remove the risotto from heat and stir in mushrooms and parmesan. Top with a pinch of salt and pepper to taste
